I don't think two-faced is accurate in this case. This is more like when you're at work and have to deal with customers but you're in a bad mood, you're still polite, but in your head you think things like 'ugh not this again' or if the customer is especially slow or annoying you might think that but obviously you wouldn't say it out loud. And it doesn't always mean you really believe the thing you're thinking, sometimes it just happens, especially under a lot of stress.

That's why potions like that or mind reading wouldn't actually be good for knowing someone's real feelings, because people have a lot of 'junk thoughts' on the surface. You'd have to delve deeper to see how they really feel. You can be annoyed at people you love, but still love them, but if someone peeked in at just that moment in your thoughts, they'd assume you hate that person.

Not exactly psychopathy, but many mental states have that coping mechanism. For instance, say you're a nurse treating a patient, you might be freaking out on the inside while you learned to remain calm on the outside. Or a parent whose kid just broke a family heirloom might not go off the rails as they might want.

In Mina's case, she is a ghost who has lived bound to the home for quite a while without showing her more "negative" emotions. However, psychology teaches us that we can't get rid of them, just learn to better filter them in positive ways such as encouraging change when someone annoys us. That doesn't mean those intrusive thoughts don't appear... unless you take a potion to make them show up.
